Need a quick and easy holiday recipe to make this season? These chocolate almond bark peanut clusters are sure to be a hit. They take less than 30 minutes to make, require no baking and are seriously addicting. One of my all-time favorites! (I lovingly refer to this as Christmas Crack, although I’ve heard there is a different treat with that name… Consider this my version!)
This recipe was my grandma’s and is in my homemade “Favorite Family Recipes” cookbook from my mom… Which is complete with amazing family photos like the one below of my cousins, siblings and me. ;) Enjoy!
Chocolate Peanut Clusters Recipe
Ingredients
- 2 lbs. chocolate almond bark / candy coating
- 1 cup chunky peanut butter
- 2 cups dry roasted peanuts
- 2 cups marshmallows
- 3 cups Rice Krispies
Supplies
- Large microwave-safe bowl
- Spatula(s)/spoon(s)
- Ice cream scoop (optional)
- Parchment paper
Instructions
Step 1: Melt chocolate almond bark in a microwave-safe bowl. (I recommend using the biggest one you have.) Follow the melting instructions on the bark’s package, as some have different recommendations. Basically, it’s just important to heat the bark in small amounts of time, stirring often so it melts evenly.
Note: The actual recipe says to melt the bark in an ovenproof bowl in a 200-degree oven, so that’s an option too. I just prefer the ease of the microwave. ;)
Step 2: Add the other ingredients one at a time, stirring each in as you go. (This is why you need BIG bowl. Ha!) Mix well.
Step 3: Drop by spoonfuls on wax paper and let dry. I’ve found using an ice cream scoop works well here!
That’s IT! You’ll have a salty and sweet treat to take to gatherings, to coworkers or to just enjoy yourself. You can see above I made more than 40 clusters with just one batch… You could even make them smaller if you need more!
